Quick and easy Spaghetti Squash recipe featuring zucchini, sautéed onions, and crispy chickpeas, topped with garlic yogurt. A healthy, gluten-free meal that's perfect for a nutritious lunch or dinner.
Ingredients
- 1 medium zucchini
- 1 medium onion
- 1 teaspoon butter
- 1 tablespoon olive oil
- 4-5 tablespoons yogurt
- 1 clove garlic
- Cooked chickpeas
- Salt
- Black pepper
- Ground paprika
Instructions
- Slice the zucchini into thin, long strips using a peeler or knife.
- Dice the onions finely and place them in a pot with olive oil.
- After 1-2 minutes, add the zucchini and stir. When the zucchini is nearly cooked, add the butter and salt.
- Toss the cooked chickpeas with spices and a tablespoon of oil, then bake in the oven or air fryer until slightly crispy.
- Transfer the zucchini to a serving plate, top with garlic yogurt, and add the chickpeas on top.
