Prepare a quick and easy rice pilaf with barley vermicelli, featuring tender rice and crispy orzo sautéed in vegetable oil. Enhanced with a touch of butter, salt, and lemon juice, this vegan dish makes a perfect lunch option.
Ingredients
- 2 cups of rice
 - 1/2 tea glass of orzo (barley vermicelli)
 - 4 tablespoons vegetable oil
 - 4 cups of hot water
 - 4 teaspoons salt
 - 1/2 teaspoon sugar
 - 3-4 drops of lemon juice
 - 1 tablespoon butter
 - Black pepper (optional)
 
Instructions
- Add the oil and orzo to a pot and sauté until they change color.
 - Add the rice and continue to sauté, stirring gently to avoid crushing the rice.
 - When the rice becomes slightly crispy and separated, add the hot water.
 - While it's boiling over high heat, add the salt, sugar, and lemon juice.
 - Boil uncovered over high heat for 1-2 minutes, then cover and simmer on low heat until the water is absorbed.
 - Once the heat is turned off, add the butter, stir until melted, and let it rest.
 - Add black pepper if desired when serving. Enjoy your meal!
