This comforting potato soup, enriched with a creamy yogurt and egg yolk blend, offers a hearty, vegetarian dish with a touch of dill and a buttery finish.
Ingredients
- 2 potatoes
- 1 onion
- 3 cloves of garlic
- 4-5 tablespoons of olive oil
- Salt
- Black pepper
- 6-7 cups of water
For its Consistency
- 1 bowl of yogurt
- 1 egg yolk
- 1 heaping tablespoon of flour
- Juice of half a lemon
For the Topping
- Butter
- Dill
Instructions
- Cut the potatoes into small cubes.
- Grate the onion and garlic, then sauté them in olive oil.
- Add the potatoes and water.
- Adjust the salt and black pepper.
- After it starts boiling, cook for 20 minutes.
- Beat the dressing ingredients well.
- Take two ladles of soup and mix them into the dressing.
- Add the prepared dressing to the soup, stirring continuously to prevent curdling.
- Cook for another 10-15 minutes and then turn off the heat.
- Add finely chopped dill.
- Drizzle melted butter over the soup.
