Enjoy a healthy vegan Courgette Pie packed with grated zucchini, potatoes, carrots, and fresh herbs, baked to golden perfection. Served with a tangy yogurt and ranch sauce, it's a delightful appetizer or light meal.
Ingredients
- 2 medium zucchinis
- 2 medium potatoes
- 2 carrots
- 4-5 fresh green onion tops
- 1/4 bunch of parsley
- 1/4 bunch of dill
- 1 onion
- 3 medium eggs
- Just under 1 tea glass of olive oil
- Just under 1 cup of flour
- 1 teaspoon baking powder
- Black pepper
- Cumin
- Cajun seasoning (I think it complements dishes well)
- Salt
For the yogurt sauce:
- 2 tablespoons strained yogurt
- 2 tablespoons ranch dressing
- 1 teaspoon dried mint
- Salt
Instructions
- First, grate the zucchini, potatoes, and carrots, and squeeze out all the moisture.
- Then, chop the onions and dill and add them to the mixture.
- In a bowl, whisk together the eggs, oil, spices, and flour.
- Add the mixture to the grated and chopped vegetables.
- Mix well and spread the mixture evenly in a baking tray.
- Bake in a preheated oven at 180°C (350°F) for about 40-45 minutes, or until the top is golden brown.
- Once it has slightly cooled, cut into slices and serve with the sauce. Enjoy!
