This quick and easy courgette appetizer is a healthy blend of sautéed zucchinis, strained yogurt, tahini, and lemon juice, finished with toasted sesame seeds, olive oil, and fresh mint for a delightful and refreshing starter.
Ingredients
- 2 zucchinis
- 1 heaping tablespoon of strained yogurt
- 1 heaping tablespoon of tahini
- Juice of half a lemon
- A quarter bunch of parsley
- Salt
- 2 tablespoons of cottage cheese
- 2 tablespoons of olive oil (for cooking the zucchinis)
For the topping:
- 2 tablespoons of toasted sesame seeds
- Fresh mint
- Olive oil
Instructions
- First, peel and dice the zucchinis.
- Place the zucchinis in a pan, add olive oil and salt, and sauté for 10 minutes, stirring occasionally until they turn lightly pink.
- At the end of the time, put the zucchinis in a food processor.
- Add all the other ingredients and blend.
- Transfer to a serving plate.
- Drizzle with olive oil, sprinkle with toasted sesame seeds, and add fresh mint. It's ready to serve.
