This refreshing avocado quinoa salad combines creamy avocado, roasted red pepper, and fresh herbs with a tangy lemon and pomegranate molasses dressing for a quick and healthy vegetarian meal.
Ingredients
- 1 cup of quinoa
 - 1 avocado
 - 1 roasted red pepper
 - Half a red onion
 - 4 green onions
 - 1 bunch of parsley
 - Salt
 - Pomegranate molasses
 - Juice of 1 lemon
 - Olive oil
 
Instructions
- Add two cups of water to the quinoa and bring it to a boil.
 - Once it boils, reduce the heat and simmer until the water is absorbed and the quinoa is cooked.
 - Peel the avocado and cut it into small cubes.
 - Finely chop the red onion, green onions, and parsley.
 - Dice the roasted red pepper into small cubes.
 - Combine all the ingredients in a bowl.
 - Sprinkle salt over the mixture and pour the lemon juice on top.
 - Drizzle with pomegranate molasses and olive oil.
 - Mix everything well.
